Dinner tonight

Disclaimer about my recipes, I often do not measure, it goes against my creative bone.
I opened the fridge and spied split chicken breasts or ground beef. Last night was meatloaf burgers so chicken it was!


4-6 tablespoons of Sarabeth's Blood Orange Marmalade
1/2 c orange juice
1.5 lbs chicken
2 tsp parsley
salt and pepper

I did not marinate, but cooked it right away. I am sure it would be better marinated.

Place chicken in shallow baking dish, cover with mixture of marmalade and orange juice. sprinkle with salt, pepper and parsley.
Cook at 375 for approximately 1 hour.

I served this with broccoli and white jasmine rice. It does taste a bit like duck sauce or mild chinese food.
